Growing up I never liked to eat vegetables. I remember a particularly bad incident in kindergarten when my teacher forced me to eat my cole slaw and I ended up throwing up all over her desk. At home, we were encouraged but never forced to eat anything we didn’t want to eat in the hopes that we would learn to love different foods on our own when we got older. And we did. I now love all kinds of vegetables . . . well, except beets.
Now that I have children of my own, I realize the importance of making sure my girls have a healthy and balanced meal. Of course, they have a different idea of what healthy and balanced means. That’s why I’ve had to come up with clever alternatives to make vegetables a little more enticing. This means either making vegetables not so noticeable or making them look fun! Vegetables, fun? YES!
The Clare Cerespo Cookbook is filled with “whimsical, step-by-step recipes that families are sure to love“. Each recipe is simple and can be made mostly with things you probably already have in your kitchen. I like the bright colorful photos of the finished product and the ideas they share on presentation. And of course, each recipe features Country Crock because it makes vegetables taste so good! My kids love putting Country Crock on their corn, beans, and carrots. I love that Country Crock has 70% less saturated fat and 30% fewer calories than butter as well as 0g trans fat.
As a part of this campaign I had the opportunity to try out one of the recipes for myself and decided on the Mt. Veggies Vocanoes.
Mt. Veggies Volcanoes
Prep Time: 20 minutes
Cook Time: 40 minutes
- 4 yams or sweet potatoes
- 1/4 cup Country Crock® Spread
- 1/4 tsp. salt
- 1/8 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1/2 cup cranberry sauce
- Preheat oven to 400°.
- Pierce yams with a fork and place on a baking sheet.
- Bake 40 minutes or until soft.
- Slice open yams and scoop flesh into a bowl.
- Mash with Country Crock® Spread, salt, cinnamon and nutmeg.
- Using very clean hands, mold into four cone shapes on a serving plate.
- Make a small indentation in tip of each cone.
- Spoon cranberry sauce into indentation and let drip down sides to resemble “lava.’’
It was so easy to make and they turned out great! I used broccoli around my “volcano” to give it some color and make it look like the surrounding foliage. And the kids loved it! They actually ate all of their Vocanoes first!
