With the 4th of July right around the corner, Better Homes and Garden (BHG) is celebrating by hosting a State Cookie Contest. One blogger from each of the 50 states will be whipping up a batch of yummy cookies that they feel best represents their state. And even though I’m somewhat of a novice baker, I thought I’d give it a shot.
So here’s my recipe . . . Hawaiian Delight Cookies
- 1 c. sugar
- 1 egg
- 1/2 tsp. salt
- 1 1/4 c. coconut
- 1/2 c. crushed pineapple
- 1 c. macadamia nuts (chopped)
- 1/2 c. butter
- 2 c. flour
- 1/4 tsp. baking soda
- 16 oz. pkg. chocolate chips
What I learned:
I never realized how important quality bakeware is to your finished product. I have a cheaper jellyroll pan that I bought from a discount store years ago that I usually use when making these cookies. This time around I used the baking sheet that was provided by BHG. This sheet features the unique triple-performance grid, comfortable silicone handles, light-colored surfaces, and is even dishwasher safe!
OMG! What a difference it made! My cookies came out perfectly browned and evenly cooked. Even Kacie who usually doesn’t like this recipe because she doesn’t care for coconut loved this treat!

I’ve never heard of Hawaiian Delight Cookies…is this your own recipe? It looks sooooo good. I’m going to vote right now =)

I will copy this recipe and make it for the next “bring cookies” for a church function.
Okay, I’ll admit it: the only way I like coconut is when it’s coconut shrimp, and even then it has to be really crispy. I’ll also admit that this recipe makes me think I might like coconut if it was eaten this way.
